IF you are growing Basil you’re probably thinking about Pesto!
There are various types of pesto, you can use almost anything you can think of. Most commonly used is fresh basil, garlic, Olive oil, parmesan cheese and pine nuts.
But to tell you the truth I honestly very rarely use pine nuts. Here in my very rural community you can’t find pine nuts so easily in my your local grocery stores.
We all know pesto is amazing and so easy to make and a wonderful way to preserve those yummy herbs coming in from your Gardens in the summer.
I’d like to share this version of pesto that uses no nuts at all, so what do we use? Sunflower Seeds YES sunflower seeds.
As versatile as pesto this one is amazing you will not miss the nuts at all. I use roasted salted shelve sunflower seeds they give the pesto that nutty flavor that we all love in a traditional pesto.
Sunflower seeds are very budget-friendly and usually very easy to find and your local grocery store.
Bonus even someone with a nut allergy can enjoy this delicious pesto.
I personally make various types of pesto throughout the season and freeze it to enjoy in those the long New Hampshire Winters.
I typically freeze the pesto in Ziploc bags laid flat for easy storage. I also freeze some in smaller trays such as ice cubes trays and then transfer into freezer storage bags, love to add just a little bit of flavoring to soups or salad dressings. I like to pull out one of the Ziploc bags for dishes such as chicken pesto one of our family’s favorites.
Using the Sunflower seeds is always one of my go-to methods of making pesto. it is very cost-efficient the pesto sauce is tasty and smooth. In my opinion a perfect pesto.
So let’s get started with this nut free basil pesto using sunflower seeds.
The ingredients that you will need for this sunflower seed pesto are.
- 2. cup of packed Basil leaves.
- 1/3 cup of sunflower seeds.
- 2 cloves of garlic.
- 1/2 cup of grated Parmesan cheese.
- 1 tbsp of lemon juice.
- 1/3 to 1/2 cup of olive oil a little less little more depending on the consistency you prefer.
- and salt and pepper to taste.
Place all ingredients in a food processor or blender and blend together until the the pesto sauce reaches the consistency you like.
That’s it we’ve made nut-free pesto using sunflower seeds now you can enjoy right away with your favorite meal or store it away for a later occasion.
