A family favorite, it is simple and easy and delicious.

With most homesteaders having farm fresh eggs at their disposal pretty much daily. Breakfast casserole is a great recipe to have in your back pocket to use up all those farm fresh eggs.

It is also a recipe that I use in our batch cooking pretty much weekly. It is extremely versatile. You can make it with almost any veggies and or meat that you have on hand.

Not only does this casserole use up plenty of your farm fresh eggs (you could always use store-bought as well). You honestly can use whatever meat, veggies and cheese you have in the fridge. We have had breakfast casserole countless of numbers of ways. This egg casserole also keeps well in the fridge for up to a week. not that it’s ever actually lasted that long here on our Homestead.

You can serve your breakfast casserole in various ways not only does it keep well in the fridge, but it reheat easily in the microwave. I usually store it in an airtight container or ziplock bag sliced in squares. My kids enjoy eating it straight out of the microwave with just a little bit of ketchup. Sometimes we will break it up and serve it in a tortilla like a breakfast burrito with taco sauce or salsa. It is a nice easy warm satisfying breakfast on those busy mornings.

This week’s breakfast casserole will be a ham,crumbled breakfast sausage with fresh bell peppers and freshly grated sharp cheddar cheese. We cannot forget the star of the show your farm fresh EGGS.

Alright so let’s get started, the main ingredient you need is EGG pretty much after that it’s up to you but here is one of our favorite ways to make breakfast casserole.

2. dozen eggs.

2. cups of diced ham.

1. 16 oz roll of breakfast sausage

  • 8 oz block of shredded cheddar cheese (about to cups)

1.diced bell pepper

1/2. a cup of milk.

1. tablespoon of Lazy Creek house seasoning

Lazy Creek house seasoning is a beautiful blend of granulated garlic, granulated onion, pepper, Italian seasoning mix and a slight dash of smoked peprika . (Look for full recipe on blog and hope to have for sale in shop soon )

First we crack our eggs into a bowl. mix eggs together with a fork or a whisk until they are combined.

Then add your half a cup of milk and continue to stir.

Then add to a greased 9 x 13 baking pan.(I always put foil in my pan because I hate dishes). Then I add the ham, sausage,Bell pepper, shredded cheese and you’re 1. tablespoon of Lazy Creek house seasoning.

Then stir all ingredients into egg mixture to combine thoroughly and place in a 350 degree oven for anywhere from half an hour to 45 minutes depending on your oven.

You want to make sure that a fork comes out of the center of your casserole clean. If the top of your breakfast casserole is a little Browner than you’d like and the center is not cooked you can cover with tin foil and continue cooking.

It could be completely vegetarian, it can be a meat lovers, you can add just cheese the options really are endless.
